Chicken Palm Beach

This months recipe is on our menu and it is the farm that meets the sea fusion. It's our chicken Palm Beach. Please try it , you will be pleasantly surprised. Til next month, Bon Appetite, Chef, Scott

2 - 8 oz. boneless chicken breasts( pounded out )
1 tsp. drawn butter
flour to dust
pinch of salt & white pepper
1 tsp. fresh chopped garlic
1 oz. white wine
2 oz. clam broth
1/2 lb. fresh sliced oyster mushroom's
1/2 cup Heavy whipping cream
1 tsp. fresh chopped tarragon
4oz Petite Lump Crab Meat

         In a 12 inch saute pan put on burner amd turn stove top on med. high . Season flour with salt and pepper. Dredge chicken in seasoned flour and coat well. when pan is hot add butter and as butter starts to bubble add chicken. Brown on one side and flip. Add garlic and mushrooms toss quickly and deglaze with wine.Turn heat down to low and add clam stock. You are now making a pan sauce with your dish. It should be thickening so add the heavy cream and tarragon.Check to see if chicken is cooked all the way through. If chicken is done, add crab to warm it a little . Place chicken on plate and pour the mushroom sauce over the top.
