Korean BBQ Karubi Ribs

Serves 4
Korean BBQ sauce:
½  small Spanish onion ( minced)
2 Tb. – minced garlic
2 Tb. – minced ginger
1 Tb. – sesame oil
3 Tb. – soy sauce
2 oz. – sciracha chili sauce
2 oz. – packed light brown sugar
2 oz. – rice vinegar
Mix all ingredients until sugar has dissolved. Set aside
Preheat oven to 375*
For the ribs,
3 Tb. – peanut oil
3 -  1-2 lb.  bone-in pork short rib racks ( 3 bones )
1 Tb. - paprika
Sea salt and pepper to season
Korean BBQ sauce to baste
First, rub the ribs with paprika, salt and pepper. Place a sauté pan on medium heat; add oil. Lightly brown the ribs on both sides and place in a deep rectangular dish. Brush the ribs with BBQ sauce until well coated. Cover the pan with foil and place in oven. Cook for 2 hours to tenderize ribs. Pull ribs and let them cool. When cool, slice rack in to ribs. Prepare a gas or charcoal grill. When hot, add the ribs just to get hot, basting with remaining BBQ sauce. When ribs are just caramelized and hot, pull off the grill, and serve with your favorite cole slaw.
